Cebu-bred Chef Gilbert Ortega brings flair to the Chinese dishes served at the Lotus Court. He started off as a Wok Chef at the Lotus Court but moved up to be the current star Chinese chef of the Marco Polo Hotel. He was first noticed because of his innovative Cantonese dishes, the most popular Chinese style cooking. Chef Gilbert Ortega was sent to Hong Kong to undergo a comprehensive training on uniquely Hong Kong style cooking and dishes.
The result is a whole lot of tasty dishes ranging from appetizers, main courses, soup, dimsum, and various rice choices. You can start your meal their Seafood Salad with XO Sauce, with their slow-cooked soups distinct to Cantonese cooking; try their Lotus Court Seafood Wanton Soup or Four Sea Dragon Soup. Try also their entrees like the Bean Curd Stuffed with Minced Shrimp in Black Bean Sauce and their Braise Sea Cucumber with Fish Fillet and Broccoli.
For seafood cravings, try the Lotus Court Sautéed Lobster, their Squid Stuffed with Minced Shrimp in Sweet Chili sauce, Braised Fish Head with Bean Curd in Sate Sauce, Fish Fillet with Potato in Curry Sauce and Braised Catfish in Spicy Coconut Sauce.
